This delicious recipe is great for care partners to prepare, for clients with advanced level cooking skills to prepare and for our brains to enjoy!’It truly is a meal which feeds your brain – while preparing, cooking and consuming it, and will leave you thinking about it for hours afterwards.’This delicious vegetarian meal, using Sweet Potatoes and Black Beans, will help support memory improvement and may support reversing the detrimental effects of Alzheimer’s.

Sweet Potato and Black Bean Chili

What you will need

  • 2 teaspoons extra-virgin olive oil
  • 1 medium-large sweet potato, peeled and diced
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons chili powder
  • 4 teaspoons ground cumin
  • ½ teaspoon ground chipotle chili
  • ¼ teaspoon salt
  • 2½ cups water
  • 2 x 425 gram cans black beans, rinsed
  • 1 x 400 gram can diced tomatoes
  • 4 teaspoons lime juice
  • ½ cup chopped fresh coriander (if you like it – to serve)

How you will cook it

Heat oil in a large saucepan (with a lid) over medium heat.

Add sweet potato and onion and cook, stirring often, until the onion starts to soften and turns translucent, which will take about 4 minutes.

Add garlic, chili powder, cumin, chipotle and salt. Stir constantly while cooking to really bring out the flavour and scents.’This will take around 30 seconds.

Add water and bring to a simmer. Cover, reduce heat to maintain a gentle simmer and cook until the sweet potato is tender (around 10 to 12 minutes).

Add beans, tomatoes and lime juice. Turn up the heat to high so that it returns to a simmer.’Make sure you stir this dish often when the heat is turned up.’Food can stick to the bottom of the saucepan easily at high heat, and it may alter the taste or make cleaning your saucepan very difficult afterwards.

Reduce the heat again after you have brought the dish up to simmering, and continue to simmer until slightly reduced. This should take about 5 minutes.

Remove from the heat and stir in chopped coriander to serve.

Not everybody likes the taste of coriander, so you do not have to serve that at the end.’You can also adjust the amount of chili to suit your tastes, or even remove the chili altogether.’The beans and sweet potato are still great for your brain.

Before you gobble this bowl of deliciousness up, please make sure it is cool enough to eat. I just know that you will want to consume such a tasty meal quickly, so to make it truly enjoyable, wait until it cools a little.
